Method

  1. Heat the oven to 180 °C. Line a baking tray with baking paper or grease it lightly.

  2. In a large bowl, cream the butter, white sugar and brown sugar until smooth and creamy, about 3 to 4 minutes with an electric mixer on medium speed.

  3. Beat in the eggs one at a time, then mix in the vanilla.

  4. In a separate bowl, whisk together the flour, bicarbonate of soda, baking powder and salt.

  5. Add the dry ingredients to the wet mixture on low speed and mix until just combined. Don't overmix.

  6. Fold in the chocolate chips and nuts (if using) with a spatula.

  7. Drop rounded tablespoons of dough onto the tray, about 5 cm apart.

  8. Bake for 10 to 12 minutes, until the edges are golden but the centres are still soft.

  9. Cool on the tray for 5 minutes, then move to a wire rack to cool completely.

The Pinch

Where to trust your instinct

Take them out while the centres still look a little underbaked. They keep cooking on the hot tray and set as they cool.

Storage

Keep in an airtight container for up to 5 days, or freeze the scooped dough and bake from frozen (add 2 minutes).
